上個世紀的古早菜,老一輩的華人應該對這道菜不陌生。但隨著時代的推演,這道菜已經漸漸在我們的食譜裡退去了顏色。今日有幸與一群狐朋狗輩到半山芭著名的適苑酒家嚐嚐這道快要失傳的古早菜。實在是一種小確幸。

棋盘鸭是接近失传的潮州菜,是上个世纪风行古晋酒楼的名菜,做法繁复,近年来肯做的酒楼越来越少,算得上是濒临绝种菜肴。

Duck, although quite common is also somewhat of an exotic dish. Different restaurants have their own specialties. In Chinese cuisine, Peking Duck comes to mind and others like the French have Duck a L’Orange.
